This is a great soup for cold weather! Smoky sausage and chunky potato mashed in the pot make for a cozy dinner, perhaps with some crusty bread. Cooking spray and turkey sausage make it lower-calorie, and kale helps make it vitamin-rich! This is a recipe from the Joy of Cooking; the original recipe is for a soup called Caldo Verde, and it's properly made with a spicy sausage called chorizo. The first time I made it I couldn't find any chorizo so I made it with kielbasa (I was in the midwest!). It's delicious, but not exactly the real thing.

1 medium onion, chopped
2 cloves garlic, minced
8 cups water, or 6 cups water and 2 cups Chicken Stock,
4 medium potatoes, peeled and thinly sliced
Salt and pepper to taste
Cooking spray
6 ounces turkey kielbasa, thinly sliced
4 cups shredded kale, Swiss chard, or collard leaves
(from a 6- to 8-ounce bunch), washed and dried.
2 tablespoons fresh lemon juice

Here is how you make Faux Portuguese Greens Soup:

Heat olive oil in a large pot, over medium high heat. Add and cook onion and garlic, stirring, about 5 -10 minutes.Add and stir in water, broth or bouillon, potatoes, and salt and pepper to taste. (keep in mind that both the kielbasa and the broth may be salty...better to add salt in at the end than to overdo it) Bring to a boil, reduce heat, and simmer until the potatoes are soft, about 20 minutes.Remove from heat. Using a potato masher or a large whisk, mash the potato slices right in the pot. If you like bigger chunks of potato, mash lightly. Mash more thoroughly for a finer texture.While your potatoes simmer, use a medium non-stick skillet over medium heat, lightly coat pan with cooking spray and brown sausage. When sausage is browned, add it to the soup pot. Scoop a little of the broth back into your skillet and use a wooden spoon to scrape up the yummy brown bits that may still be in the pan. Add this liquid back into your soup pot.Simmer for five minutes.Stir in kale, simmer for five more minutes.Stir in fresh lemon juice. (sounds odd, but it really adds a complexity and a nice bright flavor)Ladle into warmed bowls, serve with crusty bread if desired.
