8 cups 99% fat free chicken broth
3 carrots, shredded
2 stalks celery, minced
1 large sweet onion, diced
3 bay leaves
1/2 cup chopped fresh parsley
1 heaping Tablespoon crushed, fresh thyme

Here is how you make Homemade Healthy Split Pea Soup:

Make 14 1 cup servingsOn the day before you plan to make the soup, cook down the ham and ham bone in the chicken broth. It should take about 4-6 hours. Remove the ham from the bone and refrigerate overnight. Pour the broth through a strainer and refrigerate that overnight, also. Soak the dry peas on the counter overnight in as much water as will cover them completely and add 2 inches.Take the chilled broth from the refrigerator and scoop off any remaining fat that has risen to the top. The broth will be think and gelatin-like. Remove anymore visible fat from the ham chunks and tear into bite-size pieces.Add the ham, broth, all vegetables and seasonings to a large stock pot. Cover with water. Turn on low and let simmer until peas are tender and begin thickening the soup. I like to freeze any leftovers in 1 Cup containers.
