2 stalks green onion
1/3 to 1/2 package soft tofu

How Do I Make Miso Soup with Daikon?

Here is how you make Miso Soup with Daikon:

Peel daikon and cut into pieces around 1/2 inch thick (1cm) and 1 inch on a side more or less (2cm). Break up the kombu into bite-size pieces. Add both to the water along with dashi powder, and bring the water to a boil. You can substitute vegetable broth, chicken broth, or any other flavors or leftover stock for the stock. You can also use wakame instead of kombu.Reduce the heat to a slow simmer and cover, let cook around 15 minutes, or until the radish is no longer bitter, but still relatively firm. (Unless you like it soft. Cook it as much as you want.)Cut the green part of the onion into fine slices with a very sharp knife. You need around 1 tablespoon per bowl. Then, slice the remainder into 1" pieces (2.5cm). Put the large pieces into the soup, and allow it to cook.Put the green onion slices into the serving bowls.Slice the tofu into cubes. 1/2" to 1" on a side is a good, large size. You want them to be nearly as large as the daikon.Add the tofu, then add 1 to 2 Tbsp of miso. Start with 1, and let it dissolve in the water around 3 minutes, stir gently, and taste. If it needs more, or you like it salty, add the second tablespoon. Also, if you like the miso flavor to penetrate into the daikon, you should add around half the miso during the simmer, instead of at the end. When you ladle it into the bowls, the green onion will rise to the top, adding a little dash of color.Serving Size: Makes 2 to 4 servings.Number of Servings: 4Recipe submitted by SparkPeople user JOHNKAWAKAMI.
