(Was hard to tell. I used enough to cover the sun dried tomatoes and garlic) Chicken stock - about 6-8 cups Salt and pepper to taste How Do I Make Succulent Mushroom Soup?Here is how you make Succulent Mushroom Soup: Dump mushrooms, onion and butter into large pot on high heat. Sprinkle with salt and pepper and give a quick stir.Now leave the mushrooms to sear. Don't stir until they've released a good bit of their water. (This causes a lovely crusty brown to stick to the bottom of the pan. You'll want that later for flavor.) When the mushrooms and onion have quite a bit of liquid bubbling up around them, then give it all a good stir. Let the mushrooms cook down until they're soft.Add the red wine with tomatoes and garlic. Cook together for about 10 minutes or so to marry all the flavors together and evaporate out the alcohol. Make sure you scrape the bottom of the pan well to release all those lovely crusty bits from off the bottom of the pan!Watch that the pot doesn't boil dry. If you're worried, turn down the heat.Add the chicken stock and simmer at least 1 hour.
