I use fresh herbs on stem tied together if I have them. Stir. Bring to boil, then reduce heat to where soup is just lightly bubbling (simmer) for 2hrs. till thick, but still a little watery. (you can add extra water if needed). Remove ham hock to side to cool. peel and dice potates and add to soup. simmer till potato tender, approx 30min. turn off heat, cover.pull meat off ham hock and shred, add back to soup. stir. Soup should be thick and creamy. if still watery, simmer for longer period until thickness desired. Add pepper (salt if desired, but will increase sodium) and serve.
