vegan soup stock, to taste
4 cups water

Here is how you make Soup: Vegan Balsamic and Parmesan Roasted Cauliflower with Ginger:

Preheat oven to 400F.Roughly chop cauliflower, onion, and ginger root - put in large bowl. Add garlic cloves (skin-on) and toss all together with favourite seasonings.Put the vegetables on a baking sheet, spread evenly, and put in oven for 30 mins. Check on veggies and shake them around after 15 minutes.Once veggies are tender, add balsamic vinegar and toss to coat. Top with parmesan cheese and return to oven for another 5 minutes.While veggies are roasting, make soup stock on stove with your favourite seasonings and ~4 cups of water, depending on how thick you like your soup.
