What Are The Ingredients For Poor Man's Egg's Recipe?The ingredients for Poor Man's Egg's are: -5 whole jumbo eggs-10 jumbo egg whites -1 whole jar of Trader Joe's Arrabiata Sauce (or your favorite marinara) -1 can diced tomatoes -3 cups cauliflower florets -1 chopped green bell pepper -1 chopped small onion (~1 cup) -1 cup sliced fresh mushrooms -Approx. 1 cup of chopped baby carrots (or any carrots - baby are easy because they're already peeled) -3 cloves garlic, minced -Salt, pepper and seasoning to taste How Do I Make Poor Man's Egg's?Here is how you make Poor Man's Egg's: 1. Pre-heat oven to 425*F2. Chop green bell pepper and spread on large baking sheet covered in non-stick spray. Remove cauliflower florets from stem and put on baking sheet. Chop or slice carrots and place on baking sheet. Drizzle a touch of olive oil or spray lightly with olive oil or coconut oil non-stick spray and roast in oven till cauliflower is golden brown.3. While pepper and cauli roast, dice onions and slice mushrooms and saute in a LARGE flat pan along with minced garlic using non-stick spray and a little water or chicken stock. Once onions are caramelized, pour in diced tomatoes and arrabiata sauce. Put heat on low and simmer.4. When pepper/carrots/cauli are done roasting, add to sauce and stir around. Then, using a spatula or wooden spoon, create "pockets", or small craters, in the sauce/veggie mixture. In each pocket, crack open 1 whole egg, and then add 2 egg whites. Make sure the "pockets" are big enough to hold the egg without it spilling over. Create 5 craters for each of the egg "patties" to cook.5. Cover pan and cook on medium heat for 15 minutes or until eggs are cooked all the way through.6. Place egg and sauce on a plate on top of toasted french or sourdough bread, sandwiched in an english muffin, or in a bowl on top of a rice pilaf, a mound of spaghetti squash or quinoa, or you can mix in some kidney beans to the mixture to make it a complete meal.
