Add the lukewarm water and swirl lightly. Let the yeast proof (until foamy) for about 5 minutes. Add in the flour and salt - stir by hand with a wooden spoon until combined. The dough will be WET & STICKY - this is what you want. Cover the bowl with warm, damp paper towels and let it rest/rise for an hour. Line a large rimmed baking sheet with parchment paper.After an hour, stir the air out of the dough with a wooden spoon and then pour it onto the prepared baking sheet. Sprinkle flour onto the dough and your hands so that you can spread the (soup-like) dough to fill the baking sheet. Set aside for another hour to rise.
