Please note that there are no exact measurements. This is primarily what my Cajun friend likes to call a 'clean the fridge' recipe. You use what you have on hand to make the gumbo. Any seafood can be used from clams and crawfish to oysters and tilapia. This freezes well so I make big batches in a five gallon stock pot. I make it with my own vegetable broth to cut down on salt.
