Here is how you make Tunisian Couscous:

You will need a stove top double steamer.Mix couscous with oil and 1/2 tsp turmeric.. be sure that there are no chunks of couscous. the oil should keep the pieces separate. Place in top part of steamer.Mix 4 cups of water, tomato paste, pepper paste (or powder), turmeric and cumin in the bottom of the steamer. Add vegetables and meat.Heat until boiling, then reduce to a slow boil.
