My take on New Mexico style green chile enchiladas. These are definitely not an everyday food, but are still packed with protein and fiber thanks to the chicken, brown rice, and beans; fire roasted green chiles, lime and cilantro add a ton of flavor. We sometimes serve this with extra cilantro, chopped raw onions, and a spoonful of greek yogurt. If the measurements seem a bit weird, it's because I make a double batch - two 8x8 or 9x9 pans. This recipe makes one pan, or four large servings. You will need a slow cooker or a dutch oven to cook the chicken.

1 cup fresh diced fire roasted green chile - 1 can hatch chiles, drained, is a good substitute
1.25 lbs boneless skinless chicken breast
1 large pinch each smoked cumin, coriander
small pinch red pepper flakes
1.5 cans beans, black or pinto
6 corn tortillas
1.5 cups cooked brown rice
the juice of one lime, plus wedges for squeezing
1/5 cup chopped cilantro
1 cup shredded cheddar cheese
1/2 large can green enchilada sauce

Here is how you make New Mexico Green Layered Enchiladas:

Combine green chiles and chicken, cumin, coriander and red pepper in a slow cooker or dutch oven, cook on low for 4-6 hours. Shred when tender.Cook rice (I use a rice cooker, it takes about 30 mins) an hour before assembly, allow to cool to warm before stirring in the juice of one lime and chopped cilantro. Drain and rinse beans very well to get rid of as much sodium as possible. Preheat oven to 350, then eat corn tortillas well in a hot, ungreased skillet for 15-20 seconds per side, then cut three of the six into thirds. To assemble, drizzle the bottom of the pan with enough sauce to coat, then use one whole corn tortillas and one cut one to cover the bottom, then layer 1/3 each chicken, rice, and beans. Drizzle with 1/3 remaining sauce, then cover with tortillas. Cover with second third of fillings, sauce, and the last two tortillas. Layer on the remaining toppings and sauce, sprinkle with cheese, cover and bake for 25 minutes. Uncover and bake for a final five minutes. Allow to cool for another 5 minutes before serving.
