1 large bunch chard (about 8 cups, torn to small pieces)
1 bunch beet greens (about 3-4 cups, torn to small pieces)
2 oz. feta, crumbled
2 c. marinara sauce
2 c. prepared firm polenta, sliced

Here is how you make Sauteed Greens w/ Shallots and Feta over Polenta w/ Marinara:

Heat a nonstick skillet over medium heat; when hot, add pine nuts and toast, stirring occasionally, till fragrant and golden. Set aside. Heat 1-2 tsp. olive oil in a large skillet (use one with a lid) over medium heat. Add shallots and cook, stirring constantly, till golden. Add greens (work in batches if needed). Stir to coat with shallots, then cover, reduce heat to low, and let steam till vibrant and tender. If working in batches, repeat. When all greens are cooked, toss together with feta and pine nuts; set aside & keep warm. Heat remaining olive oil in skillet over medium heat and gently place polenta slices in pan. Cook a few minutes on each side, till golden and crisped. To serve, arrange polenta slices on a plate, top with greens mixture, then marinara.
