Turn off heat and cover for about 30 minutes. While reserving the liquid, Drain and chop mushrooms. Place chicken broth to a simmer in pan. In a large saucepan, melt butter with the olive oil and saute the onions for approx. 10 minutes. Add rice and mushrooms to the onions and stir for about 5 minutes. Add wine, reserved mushroom liquid and stir until rice has absorbed it. Slowly add chicken broth to rice mixture one cup at a time until absorbed. Stirring almost constantly until the rice is tender and the mixture is creamy.
