1/2 cup dried Shitake Mushrooms (I used Costco)
1 Cup Hot Water
5 cups Blue Menu Low Sodium Chicken Broth
2 tblsp butter
2 tblsp olive oil
1/2 cup white wine
1 cup chopped red onion
1 tblsp fresh sage, chopped
1/2 cup grated Grana Padano Parmesan Cheese


How Do I Make Shitaki Risotto with Onions and Sage?

Here is how you make Shitaki Risotto with Onions and Sage:

Place Shitake mushrooms in hot water in small pan and heat until just to a boil. Turn off heat and cover for about 30 minutes. While reserving the liquid, Drain and chop mushrooms. Place chicken broth to a simmer in pan. In a large saucepan, melt butter with the olive oil and saute the onions for approx. 10 minutes. Add rice and mushrooms to the onions and stir for about 5 minutes. Add wine, reserved mushroom liquid and stir until rice has absorbed it. Slowly add chicken broth to rice mixture one cup at a time until absorbed. Stirring almost constantly until the rice is tender and the mixture is creamy.
