This recipe has been adapted from one found on Gina's Weight Watcher's Recipes site. (http://www.skinnytaste.com/2008/03/split-peas-soup-with-ham-2-points.html) I added more carrots, plus celery and swapped out the ham hock for a third pound of crisped bacon. My changes added 1/2 point to her recipe.

8 cups fat-free chicken stock

4 carrots - chopped
2 stalks celery, chopped
Salt and Pepper, to taste
1/3 pound bacon, cooked and drained

Here is how you make Split Pea Soup with bacon:

Wash peas and drain them. In a large stock pot, saute onions, celery and garlic in about 2 tsp of oil, making sure not to burn the garlic.Add peas, carrots, bacon and your chicken stock, then cover the pot and let it come to a boil. Add salt and pepper to taste.Once it boils, reduce heat and simmer for about two hours (peas should be very soft by then). You may need to add a little more chicken stock if it becomes too thick.
