*Smithfield Hardwood Smoked Ham/Center Slice, 16 oz
Salt, 3 tbsp
Tomatoes (stewed), 8 cup
Water, filtered, 2 cup
*Okra, frozen, cooked, boiled, drained, with salt, 1 package (10 oz) yields
Cider Vinegar, 1 tbsp


How Do I Make Granny Vick's Okra Soup (Healthy Version)?

Here is how you make Granny Vick's Okra Soup (Healthy Version):

Cook Smithfield Hardwood Ham, or similar separate for the ham for this recipe.In a large cooking pot (we use an enameled cast iron pot), place 2 cups chopped onions and olive oil. Cook on Med-Hot, covered, and stir frequently, until onions are tender/semi-translucent. Add chopped carrots and 1 cup water, 2 TBSP salt and 1 TBSP black pepper. Cover and allow to cook until carrots are slightly tender. Then add tomatoes, shoepeg corn, baby lima beans and remaining water and salt. If ham is already cooked, place the ham into the pot and allow everything to come to a boil then place on MED-LOW, stirring often. Once the vegetables and ham have come to a settled, low boil, add potatoes and allow to cook until tender. (Need to add potatoes last, or they will become too soft and break apart). In a separate pot, boil fozen okra in about 4-6 cups of water with about 1/2 cup vinegar. Once the okra has turned from dark green to light green, and are tender, drain and rinse in sink. Transfer the okra to the soup pot and when potatoes are tender, and okra are added, turn soup down to simmer for 10 minutes or until dinner time. Notes:*** The vinegar used to cook the okra is added to the water and keeps the okra from being "SLIMY." You'll notice a great consistency after cooking the okra this way before adding them to the soup. You don't have to use cider vinegar, that's just what the menu offered me to add here online. Use white or rice vinegar as alternatives. You definitely need to rinse the vinegar-water cooked okra before adding it to the soup, or the vinegar will overpower the taste of the soup.*** This is served over rice, calories not included in this recipe. (Traditionally it has been served over white rice, but brown rice, noodles, cous cous, and quinoa are also viable options.*** This was originally made with the juice from the baked ham, which contains salt, water, fat, and other spices. In an effort to make a recipe that would be healthier, I have modified it by only adding some of the meat to the soup.
