How Do I Make Soy Seitan Herb Cutlets?

Here is how you make Soy Seitan Herb Cutlets:

-mix the wheat gluten, nutritional yeast, dip mix, and onion powder in a large bowl and put to the side. -place the chives and green onion in a food processor and blend until finely diced thenadd the remaining WET ingredients (DO NOT ADD THE VEGETABLE STOCK)and blend until smooth. add a small bit of salt, about .5 to 1 tsp.-add the tofu mixture to the bowl with the dry ingredients and mix with a spoon until it becomes stiff-wet your hands with water, and begin to knead the mixture. Add the vegetable stock slowly and continue to knead until it becomes pliable, kind of like bread dough. (5-10 mins) (also, taste a small bit of the mix to check for salt...if it needs more, add some!)-form the dough into 9-10 cutlets and place in a baking dish greased with cooking spray.(option: I typically let mine marinate overnight in a mixture of Newmans Own Herb & Garlic Marinade, veggie stock, liquid smoke and olive oil. if you do this, beware of the sodium in the marinades!)-cover and bake for about 90 minutes on 350, turning at 30 minute intervals. (you will know it is done when the middle is no longer dough like)-enjoy!*when reheating, stovetop is best. add cooking spray to a skillet and reheat for about 10 minutes, turning frequently. *they will keep for about 7 days in the fridge. they can be frozen, just add a little veggie stock to the container for moisure.*feel free to modify the spices and herbs to your liking! you can use basil, cilantro, curry, whatever!Number of Servings: 9Recipe submitted by SparkPeople user HISBEAUTY4ASHES.
