Blanch the spinach in boiling, salted water for 1 minute, plunge it into cold water and drain. You can also use frozen spinach that has been thawed to save time. Squeeze the moisture out of the spinach and chop it coursely. Season with salt, pepper and nutmeg.Place 1 Tbsp of the spinach on top of each chicken medallion, sprinkle 1/2 Tbsp of parmesan cheese and 1/2 Tbsp of FF Mozzarella Cheese. The parmesan will add more flavor, while the Mozzarella gives the filling texture. Fold or rolle the chicken around the filling and fasten each one with a toothpick or wooden skewer.In a skillet, heat the oil over medium-high heat. Saute the chicken medallions for 2-3 minutes on all sides, remove them from pan and season with salt and pepper.Mix together the lime juice, wine, stock and cornstarch in the skillet. Simmer over low heat until the sauce thickens. Season the sauce with salt and pepper. Add the chicken and remaining spinach to the skillet, cover and simmer until done.
