4 (6-8 oz) grouper or halibut fillets (about 1 inch thick)
2 medium leeks, white and light green parts only, halved lengthwise, rinsed well and thinly sliced
3 cups low sodium chicken or vegetable stock
4 cups loosely packed fresh baby spinach
1/4 cup roughly chopped fresh mint
1/4 cup sliced scallions
1 package Soba Noodles

Here is how you make Lemon-Ginger Poached Grouper or Halibut with Spinach-Leek Dashi:

Serves 4. In a small bowl, mix ginger, garlic, lemon zest, 1/2 tsp pepper and 1 tsp olive oil. Pat the mixture evenly over the tops of the fish fillets and refrigerate.Prepare soba noodles according to package directions.Heat remaining tsp of olive oil in a skillet with a cover over medium heat. Add leeks and stir constantly for about 5 minutes or until tender. Add broth and 1 tbsp of lemon juice. Cover and bring to a simmer over high heat. Arrange the fish atop the leeks in a single layer with the ginger-lemon side facing up. If necessary, add more broth until fillets are almost but not completely submerged. Cover, turn heat to low and simmer gently until fish is just cooked through, about 8-10 minutes. With a slotted spatula, place fillets in four shallow bowls, each next to a pile of soba noodles. In broth pan, add spinach, mint and scallions and stir until slightly wilted, about 1 minute. Add pepper and more lemon juice to taste. Ladle the veggies and broth around the fish and serve.
