When it splutters add onions and fry till golden brown. To this add ginger and chilli and fry for a minute.Then add the tomatoes and fry for 1-2 minutes.Add lentils to the pan and cover with warm water Gently cook the mix adding water when required (note, it is useful to keep a kettle full of boiled water for this part). Allow to cook for about 15-20 minutes, until lentils are tender.Add garam masala and turmeric powder then boil for few minutes. Add defrosted spinach and warm. Add lemon juice just before removing it from flame. - Serve with 1/2 cup brown rice and 2 poppadoms for a healthy meal under 300 calories.
