- 1/3 Cup shredded sharp cheddar cheese
- Salt and pepper to taste

- 1/4 Cup shredded mozzarella cheese
- 5 cherry tomatoes, halved
- 1/2 Cup baby spinach

Here is how you make (Keto) Personal Cauliflower-Crust Pizza with Tomato and Spinach:

Preheat oven to 450PREPARE THE CRUST:- Break cauliflower into florets, and place in a food processor. Process until florets resemble rice.- Place "rice" in a pot, put in 3 TBSP. water, and steam on medium-high heat for 5 minutes. (DO NOT SKIP THIS STEP! Cauliflower has TONS of water in it, and you want to evaporate the water to ensure a firm and stable crust).- After steaming, dump "rice" onto a large and clean kitchen towel. Pull the sides of the towel up so you can easily grab them, then twist the towel to drain any leftover water from the cauliflower.- In a bowl, put the "rice," egg, and cheddar cheese. Combine well (sometimes I find using the hands is better than a spoon). - Place a sheet of parchment paper on a cookie sheet, and plop your cauliflower "dough" on it. With your hands, flatten and mold into desired shape.- WITHOUT TOPPINGS, bake crust for 20 minutes.ADD TOPPINGS:- Remove crust from oven, and place toppings on in this order:1. Goat cheese2. Spinach3. Mozzarella4.
