Here is how you make ABDubs Cheesy Spinach Stuffed Portabellas:

Preheat your oven to 325*Handling the mushroom very delicately, peel the outer layer off to get a clean mushroom cap. Place the mushroom vents (brown) side up on a tin foil lined baking dish (be sure whatever you use has a little lip so the juice doesn't make a mess). Unwrap the wedge of Laughing Cow cheese (best if done at room temp) and gently spread it inside the cap without getting too close to the edge (I use the back of a spoon to spread, it's easier). Now in a skillet, spray non-stick cooking spray and saute your chopped shallots and red peppers (or roasted red peppers that have been stored in water, not oil) over low/medium heat. You just want to get the shallots to be translucent. When it's almost ready, add the Marsala wine to the pan and cook until it reduces by half. Remove the shallots and peppers from the pan and set aside.Spray the pan again and add the fresh spinach. Stir the leaves around trying to gently wilt them. Add the lemon juice and continue to move the spinach around until all of it is just wilted. Remove from heat.Now with a fork, place the wilted spinach inside the mushroom cap, covering as much as possible without going over the edge. Cover the spinach with the shallot/pepper mixture, drizzling any remaining liquid on top. Take your deli slice of swiss cheese and cover the top of the mushroom. Bake for 20 minutes or until the mushroom is tender (no more than 25 minutes usually).
