4 cups cooked butternut squash
1 tbsp olive oil
1 cup onion, diced
2 eggs, beaten
3/4 cup 1% milk
1 tbsp oregano
1 tsp black pepper
1 tsp salt
1/3 cup cornmeal
1/3 whole wheat bread crumbs
1 cup light cheese, grated & separated into 2 halves


How Do I Make Butternut Squash Cassarole?

Here is how you make Butternut Squash Cassarole:

*Note that your squash can be cubed, sliced, mashed or any combination of for this recipe, it's not picky. I usually end up with a chunky/mashed mess.*1) Preheat your oven to 400*F. Grease an 8" square cassarole dish and set aside. A high-sided pie plate of similar size will work just fine as well.2) Heat the olive oil over medium heat and add the onion. Saute until it starts to turn translucent, then dump into a large bowl.3) Add your cooked squash to the bowl of onions along with the beaten eggs, milk, melted butter, half of your grated cheese, oregano and pepper. Mix well.4) In a separate bowl combine the corn meal and bread crumbs. Stir half of this into your Squash mixture. Add your remaining cheese to the rest of the cornmeal/bread crumb mixture, combine and set aside.5) Pour the squash mixture into your cassarole dish. Top it evently with the rest of the dry mixture. I usually give the dry stuff a firm pat until some of the moisture from the wet mixture starts to come through, I find this helps the "crust" along.6) Bake covered for 15 minutes (use tinfoil if your dish doesn't have a lid) and uncovered for the last 10. Let sit for at least 15 minutes before serving.
