2 tablespoons onion, minced
1 cup brown short grain rice
2 cups butternut squash peeled, seeded and cut into 2? pieces
? cup butternut squash peeled, seeded and grated on large box grater

2 cups chicken stock, fat free, reduced sodium
Salt and freshly ground pepper
1 ounce parmigiano reggiano freshly grated
3 tablespoons fat free Greek yogurt
2 c. chopped swiss chard

Here is how you make Butternut Squash Risotto with Swiss Chard:

1. In a high side saucepan, melt the butter. Add the onions and cook until translucent over medium heat while stirring. Once cooked add the rice and coat the rice with the butter and cook until it is hot to the touch. Add half the stock and turn the heat to a medium to low heat and simmer the rice covered until most of the stock is gone and the rice is tender but has a pleasant bite, about 25 minutes.2. Meanwhile, to a steamer basket set over simmering water, place the chunks of squash and steam over med heat until the squash is tender. Transfer the squash to a blender, process until smooth then reserve aside in a bowl. 3. Add the chopped swiss chard to the steamer and steam till tender.4. Add the squash puree and grated squash to the rice and continue to cook until you have nice bright orange creamy looking rice. Add the Swiss Chard and the cheese seasoning with salt and pepper to taste.
