I love Thai food. But it's high cal, and it's expensive. Boyfriend found and modified a recipe and we ended up with this AMAZING meal. We ate it over rice, but I would gladly eat it as a stew or thick soup. Absolutely delicious and a fair source of protein and fiber while being low cal. What Are The Ingredients For Thai Tofu Stir-Fry Recipe?The ingredients for Thai Tofu Stir-Fry are: 1 package extra-firm tofu (could replace with shrimp or chicken if not making vegetarian)1 can coconut milk (we couldn't find 'lite' but that would lower calories! 1 green pepper 1 red pepper 1/2 large red onion 12 large baby carrots 1 can diced tomato 1 tbsp Hot Chopped Peppers 1 tbsp curry powder 1-2 cloves pressed garlic 1 tsp chili powder 1 tbsp Lite Soy Sauce 1 tsp salt 2 tsp black pepper 2 tbsp canola oil How Do I Make Thai Tofu Stir-Fry?Here is how you make Thai Tofu Stir-Fry: Prep: Slice the red and green peppers, onion and baby carrots lengthwise (we did this the night before). Cook: Use the canola oil to stiry-fry the garlic, onion and baby carrots. After the carrots have started to soften, add the red and green (as they stir fry quickly). Add the canned tomato, coconut milk, curry together. After that, add the remaining spices (chili powder, salt, pepper) one at a time. Add the hot chopped peppers and soy sauce last. Finally, allow the mixture to reduce for quite some time (10-20 minutes, depending on whether or not you used 'lite' coconut milk, and also what type of pan you are using. We have Cuisinart which have a high conductivity, so our mixture didn't need to reduce for as long). For us, this made 7 one cup servings. We each ate a cup and half, which totals just about 300 calories. We each served it over one cup of rice, for 200 calories, bringing this amazing dish to just about 500 calories. (As always, you can remove the tofu (or substitution of chicken/shrimp) to lessen the overall calories if you wish.
