Preheat the oven to 400?. Gently wash the potatoes well and pat dry with a paper towel. Rub the skin with olive oil and a pinch of sea salt. Pierce the potato several times with a fork, then bake for about 40 minutes or until the potato is cooked all the way through. You can do this step the night before. 2. Saut? bacon in a large pan. When it?s about half way done, add the scallions and kale. Saut? until kale is soft and bacon is done. 3. Carefully cut each potato down the middle and gently scoop out the flesh into a bowl.
