Cute the ends off of the acorn squash, then slice them lengthwise. Put a couple drops of olive oil inside them and smear it around to coat the entire raw surface. Place them open-side DOWN onto a baking sheet with about 1/4inch of water in it. Bake them for 35 minutes at 350 degrees. It's just easier now before you put the stuffing in them. Salt the acorn squash lightly then spoon the mushroom/onion mix into each acorn slice. Pop them back into the over for another 10-15 minutes.
