Here is how you make Bill's Mandarin Chicken Salad:

Cut the chicken breasts into 1/2 inch dice. Saute in olive oil, seasoning with garlic powder and pepper to taste. Set aside in fridge to chill for 2+ hours.Chop the lettuce. Peel and chop the cucumber into pieces about the same size as the chicken.
