1 tsp oil ( I use coconut or olive)
1 celery stalk, diced
1/2 small onion, diced
1 clove garlic, minced
1 red pepper, diced
1 yellow pepper, diced
1/2 tsp salt
1/2 tsp black pepper
pinch red pepper flakes
4c chicken broth (I use 99% fat free)
8 oz yukon gold potatoes, diced
10 oz frozen yellow corn
1.5 lb tilapia, cut into bite size pieces
1 tsp fresh thyme, or 1/4 tsp. dried
2 tsp lemon juice
1 cup fat free 1/2 and 1/2

Here is how you make Tilapia and corn chowder:

Put bacon in dutch oven and cook over medium heat until crisp. Remove and drain on paper towels.Add oil to pot and heat. Add celery, onion, peppers, garlic, and spices. Cook about 2 minutes, until just beginning to soften.Add broth, potatoes and corn ad bring to a simmer. Simmer about 8 minutes, until potatoes are just tender and corn is cooked through.Stir in tilapia and thyme. Return to gentle simmer and cook until fish is cooked through, about 4 minutes.Remove from heat and stir in 1/2 and 1/2 and lemon juice.
