Toast the frozen corn on a frying pan (with no oil) until it thaws and gets slightly browned (this will bring out more sweetness!)Cook the Grains according to package (except use 1 tsp of olive oil instead of 1 Tb butter) then let them cool.Chop up the cilantro, tomatoes, peppers.Add everything together, add black pepper to taste and let sit overnight (the overnight part is REALLY important...it doesn't taste great the first day because the flavors have to blend together.)Serve chilled or at room temp ( I have 12 servings, but it makes a really big bowl of salad and can serve more than that.
