May be served hot or cold.To serve cold: Bake potatoes using your preferred method. Allow to cool, then dice potatoes into half inch cubes. Chop scallion. Combine all ingredients in a medium bowl. Refridgerate for one hour. Serve.To serve hot: Bake potatoes. Dice immediately into half inch cubes. For stove top cooking, combine all ingredients in a saucepan and heat thoroughly, stirring frequently. For microwave cooking, combine all ingredients in microwave safe bowl and cook for 1 minute on high.
