In a large saucepan bring broth, quinoa and smashed garlic cloves to a boil. Then reduce heat to low and cover , simmer till quinoa is tender and broth is absorbed, approximately 15-20 minutes. When cooked add quinoa to a large bowl. Chop green onion, parsley, cucumber and olives then add to the quinoa. Then add the lemon juice, white balsamic vinegar and olive oil to the quinoa mixture.
