Here is how you make Kabocha Salad:

Remove the seeds from the kabocha squash. Use a potato peeler and peel the skin from the kabocha. Cut the kabocha into small 1/4 inch size cubes. Add the kabocha to boiling water and boil for about 10 minutes or until enough to easily cut a cube in half. Be careful not to overcook, you'll end up making mashed kabocha. Once the kabocha is boiled, strain the water and let the kabocha cool. Once cool, place in a bowl with the other ingredients and mix well.
