Makes 4-8 depending on the size of melon usedPeel melon, chop into cubes and put it in a large bowl. Chop onion into medium to small pieces, but do not dice too small and add to bowl. Slice cucumber into half medallions and add to bowl. Add two generous tablespoons of mint jelly and add to bowl. Then add the Lime Juice. The lime juice should start breaking down the mint jelly.
