1 cup dry bulgur wheat
1 1/2 cups boiling water
1 teaspoon salt
1/4 cup fresh lemon juice
1/4 cup olive oil
2 cloves garlic
freshly ground pepper, to taste
4 green onions, minced
1 cup minced parsley
handful of mint leaves, minced
3 roma tomatoes, seeded and chopped
1/2 large cucumber, peeled, seeded and chopped
1/2 red bell pepper, diced

Here is how you make Tabouli:

Place bulgur in large bowl. Pour boiling water over the top and stir. Allow to sit until all water is absorbed.In a small bowl whisk together lemon juice, olive oil, salt, garlic and pepper. Once bulgur has absorbed the water, add lemon juice mixture and stir until well combined. Cover and refrigerate for at least 30 minutes.Once chilled, fluff with fork.
