1 tbsp (20ml) salt-reduced soy sauce
1 tsp Chinese five spice

Separate the gow gee wrappers and cover with a clean damp towel. Combine the chicken mince, carrot, shallots, cabbage, garlic, ginger, soy sauce and five spice in a large bowl. Mix well with your hands.Put a heaped teaspoonful of chicken mixture in the centre of each wrapper. Brush the edges with water and fold over to make a half circle, being sure to remove all the air. Pleat the edge of the wrapper to seal.Cook the dumplings in batches in a large saucepan of boiling water for 2-3 minutes or until they float. Remove with a slotted spoon.Serve with 1 or 2 teaspoons of chili sauce, or soy sauce, or soy mixed with chili.
