Spray a wok or pan with olive oil non-stick spray. Heat to medium-high heat. Grate in garlic & ginger and cook on high until fragrant. Add sliced chicken and brown, sprinkling with soy sauce to keep moist. When chicken is browned (not necessarily cooked through), add vegetables and stir-fry until hot.
