For marinade, stir hot water and peanut butter together in large bowl. Stir in chili sauce, soy sauce, oil, vinegar, garlic and ginger. Stir well and add chicken breasts. Cover and refrigerate for at least 30 minutes.For fruit salsa, combine chopped fruit, pineapple, cucumber, green onion, cilantro, sugar, oil and vinegar. Mix well, cover and refrigerate for at least 30 minutes.Bake chicken at 375 degrees for 30-45 minutes, or until chicken is done.Serve chicken over hot cooked rice. Spoon fruit salsa over chicken and rice.Makes 2-3 servings depending on size of chicken breasts.
