1 c. Minute Rice-Whole grain Brown
1 egg, fresh (or sub egg beaters for lower fat)
1 carrot fresh (or sub frozen 1/3 c)
1/4 c. onion (or to taste)
2/3 c. Frozen baby sweet peas
2 tbs soy sauce
1 tbs garlic powder
Pepper to taste

Here is how you make Chicken (Un)Fried Rice:

Recipe makes four 1 c. servings.Combine chopped carrot, and onion and saute in water until to desired tenderness. You may want to start the carrot sooner than the onion since it will take longer to soften. While the veggies are cooking down, cut chicken breasts into bite-size chunks. Put a dash of pepper on chicken and brown in a shallow pan of water and set aside.Start the minute rice and cook according to box directions except you'll replace the water with chicken broth. This creates more flavorful rice.When the veggies are cooked to the desired doneness add sweet peas and heat through, then set aside.Then scramble one egg and set aside.When rice is finished, add to pan with veggies, chicken and eggs with ad additional splash of chickn broth and the 1 tbs of garlic powder, and the 2 tbs of soy sauce. Heat hrough until remainder of liquid evaproates and serve.**You may not want to add any additional salt until after you taste as the soy sauce is very salty.
