How Do I Make Chicken and Tofu Chow Mein?

Here is how you make Chicken and Tofu Chow Mein:

Cook the spaghetti according to directions. When there is approximately 2 minutes left, add the frozen broccoli. When pasta is finished cooking, drain and return to pot. Mix together the soy sauce, rice vinegar,sesame oil, and about 2/3 of the corn starch and pour over spaghetti. Mix well.Cut fat off the chicken breast and cut into thin strips, about 2 inches long. Season with salt and pepper. Cut tofu into small cubes. Rinse and rip spinach into medium sized pieces. Open the can of bamboo shoots packed in water. In a large skillet, heat a tablespoon of oil over medium-high heat. Add the chicken and cook until no pink is showing on the outside. Add the tofu and bamboo shoots, seasoning with a splash of soy sauce. Cook for 3-4 minutes or until mostly warmed through. Add spinach and season with salt and pepper. Cook until leaves are wilted. Continue cooking until all ingredients are nice and done and hot. Use the set aside corn starch to make a proof (add some water and mix) and add to the liquid in the skillet. If there is extra liquid (there should be enough to just about cover the bottom of the skillet and not much more), ladle out the extra liquid before adding the proof.
