400g frozen veg (mixed or peas&corn, whatever you've got in the freezer)
1/2 large sweet potato, peeled and cubed
2 carrots, peeled and sliced (chunky)

Here is how you make Easy Peasy Beef Casserole:

place all ingredients except frozen veg in large lidded casserole dish, add enough water to cover all ingredients well. cover and cook in slow oven (my oven's hot, usually cook this at 140C, fan forced) around 70 - 80mins. add frozen veg and return, covered, to oven until vegies are cooked (another 45mins?). i serve with fresh grainy bread rolls for the boys to dip in or sometimes make basic herbed dumplings to put on top for last 25mins of cooking time (2 cups sr flour, 1 cup milk, 2tbsp dried herbs, mix and place in large balls over casserole, cover and return to oven til cooked through)Number of Servings: 6Recipe submitted by SparkPeople user LINDA3296.
