1 Tbsp chopped garlic
1 cup chopped onion
2 tsp fresh thyme
1 jalapeno pepper [I use 1 scotch bonnet or habenero]
1 tsp black pepper
1 Lb lean beef, round steak, cubed into 1-11/2 inches
2 cups diced potato
1 cup chopped carrots
2 cups of water

Makes 4 servings, approximately 2 cups eachIn a large pot, heat the oil then add the spices, cook until curry browns a bit, but be careful not to burn it.Add the garlic, onion and pepper.
