2.2 Cups uncooked elbow macaroni
1.25 pounds ground beef
1 large onion, chopped
1.5 celery ribs chopped
1.5 large carrots shredded
1 can (28 ounces) Italian diced tomatoes undrained
2 teaspoons salt
1 teaspoon garlic powder
1 teaspoon pepper
.25 teaspoon dried oregano
1 10 oz package of frozen chopped spinach, thawed and squeezed dry
.5 cup grated Parmesan cheese

Here is how you make Spinach Beef Macaroni Bake:

Cook macaroni according to package directions. Meanwhile in a dutch oven or large kettle, cook the beef, onions, carrots and celery over medium heat until the meat is no longer pink. Drain. Add the tomatoes, salt, garlic powder, pepper and oregano. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until vegetables are tender.Drain macaroni; add macaroni and spinach to beef mixture. Pour into an ungreased 3 quart baking dish. Sprinke with cheese.
