1 1/2lb red potatoes in skins
approx 3/4t freshly ground black pepper
1 28oz can of diced tomatoes

Here is how you make Beef Pot Roast with Tomatoes:

Preheat oven to 400 degrees F.Grind some pepper in to the bottom of an oven proof dish (with lid). Place roast in dish. Grind remaining pepper over roast. Chop potatoes into large~ish pieces & surround roast with them. Pour the can of diced tomatoes over top of all. Cover & place in 400 degree oven for 15minutes. Reduce heat to 325 degrees & cook, covered for the remaining 45 minutes (for medium beef). When done, immediately remove from oven & remove lid. The beef will continue to cook for few minutes.
