I was just trying to make tacos and threw in lots of veggies to make it filling and less calories/fat per serving. It turned out wonderful. Use Trader Joe's Whole Wheat Low Carb Tortillas (not included in nutrition info) for only 50 calories a piece!!

Cooked beef in a pan and drain any fat.Add the corn, mushrooms, onion, green pepper, and red pepper and cook until the onions are translucent and the mushrooms are fully cooked.Add the water and taco seasoning and cook until the water has reduced all the way.Makes at least ten soft tacos. Feel free to get creative with the veggies.
