1 cup chopped green bell pepper
1/3 cups diced onion
1-1/2 cups shredded low-fat cheese (I used Sargento reduced-fat Mexican blend)
7 eggs
3 cups fat-free milk
1 teaspoon salt

Here is how you make Ham and Cheese Strata:

In a greased 13"x9" pan, layer bread, ham, green pepper, cheese, and onion.In a very large bowl, combine the eggs, milk, and salt. Pour over layered ingredients. Cover and refrigerate 8 hours or overnight.Remove strata from oven 30 minutes before baking. Preheat oven to 325 degrees. Bake for 40-45 minutes or until a knife inserted in center come out clean.
