Here is how you make Kale and Sausage Mac and Cheese:

Boil water for pasta and cook according to package directions. Rinse with cold water to stop cooking process.In the mean time slice sausage and cook in a large frying pan until brown. Drain most of the grease. Add onion and garlic to sweat. Slowly add in kale until slightly wilted.In a sauce pan, mix together 1 tbsp of butter, 1 tbsp oil and flour to form a roux. Add milk to form sauce. Combine pasta, sausage and kale mixture and sauce in pot used to boil pasta. Stir in cheddar and 3 tbsp Parmesan until melted. Place in a greased 13x9 baking dish (glass or corning ware).Melt remaining butter, mix with olive oil and bread crumbs and parmesan cheese. Top casserole with this mixture. Place in 350 degree oven for 30 minutes until top is golden brown and casserole is bubbly. Serve and enjoy!
