1 can Dark Red Kidney Beans
1 can Petite Diced Tomatoes


How Do I Make Easy Fiesta-Roni?

Here is how you make Easy Fiesta-Roni:

Brown Ground Beef, Drain, and set aside. (I also rinse my cooked ground beef with very hot water for less fat.) Use the same skillet and brown the Rice a Roni, you can either use the small amount of fat left in the skillet from the beef, or use some cooking spray. Add the can of tomatoes, and the can of kidney beans plus 2 cups hot water and the seasoning packet from the Rice a Roni. Bring to a boil. Cover, reduce heat and simmer 15-20 minutes, till rice is tender and most of the liquid has been absorbed. Add ground beef back into the rice mixture and heat through.This is delicious as prepared, but can also be served with tortilla chips, and topped with fat free sour cream, salsa, and lowfat cheddar cheese.You can also substitute cooked, chopped chicken breast for the ground beef, or leave out the meat completely for a delicious vegetarian meal.Makes 6 generous servingsNumber of Servings: 6Recipe submitted by SparkPeople user DIVADEB68.
