Here is how you make Laurie's homemade omelet:

chop and prepare veggies, using the amount you prefer. whip the two eggs with 1 tbsp water. heat 1 tbsp light butter in skillet over medium low heat (about 5 or 6), or spray skillet with Pam. Once pan is warm, pour egg/water mixture into pan. As egg cooks add the veggies in order listed. I like to start with the broccoli and peppers because they take a little longer to cook up and soften. Add the ham and all but 1 tbps of the shredded cheese, and lastly the tomato. By the time the cheese melts the other ingredients will be warmed. As the egg cooks, lift the omelet with a spatula, allowing the liquid uncooked egg to flow under the cooked egg.
