Preheat oven to 350 degrees F. Pat pork chops dry with a paper towel. Stir together mustard, thyme and sage. Coat pork chops well with the herbed mustard. Press brown sugar into the coated pork chops. Place the pork chops into a greased 9 x 13 baking pan. Bake for 30 minutes, or until center is light pink. When done, increase oven temperature to broil. Transfer chops to a broiler pan. Broil for 5 minutes, or until coating has caramelized. Meanwhile, pour leftover juices from baking pan into a small saucepan. Cook on medium until bubbling.
