Here is how you make French Pork Stew:

Broil meat to remove fat, and dice into 2cm cubes. Heat oil on medium in large pot/pan and fry diced onion until soft. Add garlic and pork cubes and fry until garlic is browned. Add mushroom and fry for another couple of minutes, then deglace pot with sherry. Add the chicken stock, cream vegetables and herbs, and simmer covered for an hour.
